The Sample Cellar
The Sample Cellar is a large purpose built function room and shop catering for visitors, functions, conferences etc. It is possible to view the working brewery through several large viewing windows and see the brewing memorabilia displayed in the Sample Cellar and around the brewery. On sale in our shop you will find a choice of belvoir beers available in a range of sizes from bottles to small barrels. Also available is a wide range of Belvoir merchandise including glasses, bottle gift/presentation packs and clothing. We also stock seasonal produce plus works by a local artist. In addition to the extensive menu, which is served all day every day, the Sample Cellar offers full catering facilities for large and small groups alike.

The Brewery
The original Belvoir Brewery (pronounced "Beaver") was set up in 1995 by myself helped with brewing experience gained at T&R Theakston and James Shipstone & Son. The brewery was constructed using mostly original equipment and artefacts recovered from traditional cask ale breweries all over the country. The brewery has expanded over the years and with the help of a DEFRA grant relocated to a purpose built brewery and visitor centre the opposite side of Old Dalby in 2007. Brewing in the Vale of Belvoir revives an old tradition as Belvoir Castle once housed a brewery many years ago complete with cooperage and large Castle cellars. Time-honoured brewing methods are used incorporating only the finest malt and hops. This includes several varieties of choice whole hops from Worcester and traditionally malted best English barley.
